Today i picked bunches of herbs from the garden , also loads of french lavender?
Sage../Thyme./.loads of parsley../ 8 large bunches of this strong lavender , , i have tied them in bunches and hung upside down in the airing cupboard which is very warm indeed , How long do i leave them like this , and how do i jar them when fully dry , thank you in advance ,
a bit warm in the airing cupboard for your herbs, a dark cool garage or cellar would be better. there is a danger that in hot dry air that the herbs will go brittle and lose all aroma and flavour. try somewhere cooler and dark for a few weeks. then store in jars that have been in a low oven for 20 mins to dry them out, allow to cool with lid on before putting herbs in. With the parsley you could try chopping when green and fresh and then freezing in ice cube trays filled with water. When you need some parsley for sauce just pop a couple of ice cubes in. good luck
